You'll get the full spectrum within a few spawning seasons. Some will interbreed, making the infamous F1 tiger bass, some will breed florida/florida, some will breed northern/northern.
On the question of bass genetics I recommend you stock a mix of pure Floridas and pure Northerns, probably in a 50/50 ratio.
